Tender chicken, stuffed with a blend of gorgonzola, shallots, and garlic. This recipe needs no introduction...("Stop, just stop Jerry...you had me at hello...you had me at hello." Not sure why that movie just popped into my head - there goes that other voice again.)
Here's what you'll need...
- Chicken Breast (I used 8 very thin cutlets)
- 2 cloves garlic, minced
- 1/2 shallot, minced
- 8 slices of bacon
- 1 TBSP butter
- 1 Cup Gorgonzola Cheese
- Italian Dressing
- Parsley
- Salt/Pepper
- Marinate chicken in Italian dressing 30 minutes or longer. Preheat oven to 375 degrees.
- In the same casserole dish that you are going to bake chicken in (I used rectangle glass Pyrex), bake bacon for 10-15 minutes (not fully cooked).
- Meanwhile, sautee shallots and garlic in butter over med-high heat.
- Pour into small bowl and mix with Gorgonzola & parsley.
- Stuff each chicken breast (I used 2 cutlets).
- Place 2 bacon slices over each stuffed chicken.
- Place in casserole dish (leave bacon fat in dish.) Sprinkle with salt & pepper.
- Lower heat to 325 degrees and bake for 1 hour. Once out of oven, baste with juices.
